Grapes Used
100% Pinot Grigio grapes, grown
in the Friuli region since the middle of the
nineteenth century where it has found the
ideal environment to express its best characteristics.
Location of the vineyard
Hills of the Tenuta Sottomonte in the municipality
of Buttrio (Udine), Colli Orientali del Friuli
D.O.C. zone. Hills and foothills area, predominantly
marly-clayey soil South exposure.
Training system - yield per hectare
Doppio capovolto (double bending canes).
Area: 13.10 hectares.
Average production: 7,500 kg/Ha, 5,200 litres/Ha.
Harvest period - vinification methods
Manual grape harvesting, at the beginning
of September. White wine vinification method,
slight pressing of the grapes. Controlled
temperature fermentation (at 17°C) to
encourage development of the varietal aromas.
Maturation and ageing
In the bottle, stocked horizontally in the
underground cellars for at least four weeks
prior to labelling.
Longevity
Over three years.
Sensory characteristics
Straw yellow colour with slightly coppery
undertones: the characteristic bouquet, elegant
and intense is rich in oak, walnut husk, yellow
peaches and golden apples. Harmonious and
sophisticated with marked yeasty hints, acquired
after maturation “sur lies”. The
wine is lively on the palate where it becomes
full and velvety with very persistent ripe
fruit flavours. Backing this up is a good
degree of alcohol and a pleasant crispness.
Food and wine pairings
An excellent aperitif and hors d’oeuvres
wine, it is ideal served with raw and cooked
seafood. Superb accompaniment to fish, crustaceans,
and clear soups. Sublime when served with
San Daniele ham.

Best when chilled (12°C).
